I was wondering, are SAS members expected to know when to perform certain maneouvres without being instructed by a keybind order. Such as when to perform a double stack etc.

No. You'll be told. There's no right and wrong time to do a double stack really. It's up to the EL.
Always default to doing a single stack. Although both types are in the SOPs, single one is the most common by a long way. If your EL wants you to double stack, they will let you know.
I don't have that instruction on a keybind, because it is so rare.

Well certain things come naturally, but your EL should tell you anything like that, really.
